Artichokes and baked potatoes with eggs and cheese

Here is the recipe of artichokes and baked potatoes, enriched with a beaten egg, cheese and breadcrumbs. The combinations is very tasty it is an ancient dish, a family recipe, exactly of the grandmother.

It is very easy to prepare. You can make it ready very quickly.  You can serve artichokes and baked potatoes not only as a main course, but also in buffets or as a side dish.  Hope you enjoy this delicious recipe!

Artichokes and baked potatoes recipe


  • 12 artichokes
  • 4 potatoes
  • 4 tablespoons olive oil
  • 2 eggs
  • 60 g Grana Padano (or pecorino)
  • 50 g Breadcrumbs
  • 1 bunch parsley
  • 1 garlic clove
  • 1 glass Water
  • q.s. salt
  • Lemon Juice (for artichokes)


  • First of clean all artichokes by removing the hardest outer leaves, check the upper part making the hearts, cut into 4 parts and leave them to soak in water and lemon juice for about 15 minutes.
  • Peel potatoes, cut them into slices and leave them in water for 15 minutes. Wash parsley, peel garlic clove.
  • Bring the water to a boil in a pot, add salt and blanch the artichokes for 2/3 minutes.
  • In the meantime, beat the eggs in a bowl, add the grated cheese, breadcrumbs, chopped parsley, chopped garlic, 1/2 cup of water, 2 tablespoons of oil and salt to taste.
  • Grease a baking pan with 2 tablespoons of olive oil, arrange a layer of potatoes and salt them lightly, place them on top of the artichokes, pour the mixture of eggs, cheese and breadcrumbs over the entire surface. Add 1/2 glass of water.
  • Cook in a ventilated oven, at 180 ° for 20 minutes, covering the pan with aluminum foil.
  • Then find the pan and finish cooking for another 20 minutes, until a tasty crust will form on the surface.
  • Serve the artichokes and hot baked potatoes or at room temperature, they will hit a hit!
